      I love a good muffin.  They are one of my favorite breakfast foods of all time.  But the store bought kind are loaded with sugar, bleached flour, refined oils, and all kinds of other terrible things.  Not to mention the fact that they are usually too dry for my liking.       Is it just me or does your brain not work as well at 5 pm?  Five o’clock always seems to be the time when I realize my kids need to do their homework, the dishwasher needs unloading and someone starts whining that they are hungry.  That’s why I love slow cooker meals!  When the dreaded hour of 5 pm rolls around, I’m totally prepared.   • Heathy Mac and Cheese

        I am all about making things healthy but still delicious.  I would love to get on board with those vegan mac and cheese recipes that use cashews or tofu but I just can’t.  Most of them taste gross and nothing like real macaroni and cheese. The sauce is made by mixing half regular cheese sauce and half  blended carrots.  The carrots give the sauce that bright orange color that you get from the powdered cheese sauces, but it’s so much healthier.  But since it’s half real cheese sauce, it’s still delicious.  It will fool even the pickiest kid…and grown up.     I love having healthy home-made snacks that I can grab and take in the car.  Fruits and veggies are great and all, but sometimes I just don’t have time to wash and chop apples before I rush out the door to after school activities.  This snack is the perfect solution.  My kids will eat the entire batch if I let them.  And I totally understand why, it is that good!     If you are like me, you always have bananas that have passed their prime.  Once they have brown spots, no one in my house will eat them anymore.  So this is the perfect recipe – it uses up all my over-ripe bananas and makes them into a delicious baked good that is healthy and my kids love.  This recipe uses a combination of coconut oil, applesauce, and banana to make it super-moist.  I usually double the recipe and make one loaf with walnuts for me and one with chocolate chips for my kiddos and husband.  Ripe bananas are so naturally sweet that I only add 1/4 cup of maple syrup and…

      I consider myself a vegetarian, but I do, on occasion, eat fish.  When I do, this is my favorite way to prepare it.  My kids love tuna and so does my husband so I’ve had a lot of practice getting this recipe just right.  This recipe also works well with hard-boiled eggs.
