      Is it just me or does your brain not work as well at 5 pm?  Five o’clock always seems to be the time when I realize my kids need to do their homework, the dishwasher needs unloading and someone starts whining that they are hungry.  That’s why I love slow cooker meals!  When the dreaded hour of 5 pm rolls around, I’m totally prepared. This meal is soooo simple  and so delicious it has become a regular in our household.  You can make it vegetarian or with meat.  You can load it up with extra veggies to make it healthier or omit some to please even the pickiest of eaters.  The possibilities are endless…

  • Egg and Banana Pancakes

      My family and I are obsessed with these pancakes right now.  My son asks for them almost everyday.  They are soft, moist, and, super healthy.  I’m not gonna lie, they don’t taste exactly like pancakes.  They are so much better!!  Like the soft inside of french toast.  Everyone that’s tried them, loves them, even picky kids!  There are lots of recipes out there for pancakes made with eggs and bananas, usually referred to as two ingredient pancakes.  But the small additions in this recipe make the absolute best egg and banana pancakes you will ever have!   • Green Eggs (made with with spinach)

    This is one of my all-time favorite recipes and it’s barely even a recipe!  Its a great way to get your kids to eat spinach and they don’t even have to know it’s in there. If you know me, then you know I like to put spinach in pretty much everything: smoothies, eggs, tacos, even pancakes.  Yes, I just said pancakes (Egg and Banana Pancakes).  There is something about getting my kids to eat leafy greens for breakfast that makes me feel like a rock star mom, even though I am far from it!  Now, this is the only way my kids eat their eggs.  You don’t need a fancy…

  • Healthy Chocolate Chip Zucchini Bread

    I love zucchini bread and I especially love any excuse to add chocolate chips to a recipe.  But all the recipes I have are loaded with sugar and other unhealthy things so I had to come up with my own.  This recipe is the perfect balance of sweet but not too sweet and super moist.  My kids ate it up so fast that I made a second batch within a week.  It was a great way to use up the last of the zucchini from my garden.   • Gluten-Free Flour

    This is BY FAR the best gluten-free flour ever!  My family and I do not eat exclusively gluten-free, we just try to avoid it as much as possible.  But most of the gluten-free flour I have found in the store either doesn’t taste good or, most importantly, it is incredibly unhealthy.  They are usually full of potato starch and white rice.  My recipe is whole grain and tastes good in everything from pancakes to pastry.
