• Zucchini Cakes

Try these zucchini cakes on crackers topped with tartar sauce and additional Old Bay similar to how you would enjoy crab cakes.  They are a great way to use up any extra zucchini from the garden.  They can be served as a side dish or a main course. Anyone who grew up in or near Maryland knows about Old Bay.  To Marylanders, Old Bay goes with almost everything: french fries, steamed vegetable, and of course any and all seafood.  If you haven’t experienced this delicious spice blend, it can be found in most grocery stores in the spice section.  In this recipe, Old Bay adds some delicious flavor and…

  • High Protein Waffles

This waffle recipe uses white beans to add protein to a breakfast classic.  They are made with 100% whole grain and no refined oils or sugars but are still so delicious and fluffy, you will want them for breakfast every morning.       I freaking love breakfast!!!  It is my absolute favorite!  I mean, isn’t it everyone’s??!!  But waffles, pancakes, and french toast aren’t the healthiest of meals.  So I’ve spent years trying to come up with ways to make them healthier, but still delicious.  The beans hidden in this recipe add some healthy protein without the chalky taste of processed protein powders.  It’s also made with a blend of 3…

  • The Absolute Best Whole Grain Pancakes

OMG, I have to share this pancake recipe!  It’s amazing!  It’s life changing!  I will never eat any other pancakes again.  They are so soft and fluffy and do not taste like whole grain at all.  My mouth is watering just thinking about them. I wish I could get on board with the whole gluten-free thing.  I know it’s probably healthier and in some cases it tastes okay, but I JUST CAN’T DO IT.  I see the looks on neighbor kids faces when they eat my gluten-free snacks, and it ain’t good.  They can tell something is off, but don’t know exactly what.  That is not the look I’m going…

  • Healthy Whole Grain Blueberry Muffins

I love a good muffin.  They are one of my favorite breakfast foods of all time.  But the store bought kind are loaded with sugar, bleached flour, refined oils, and all kinds of other terrible things.  Not to mention the fact that they are usually too dry for my liking. This recipe is made with no refined sugar or oil, 100% whole grain, and they are super moist and delicious.  So you can eat them totally guilt-free! Preheat oven to 400 degrees. Grease or line 12 muffin cups.  I like to put the frozen blueberries on top of the oven while it preheats.  It thaws them just the right amount.  …

  • Whole Grain Banana Bread

If you are like me, you always have bananas that have passed their prime.  Once they have brown spots, no one in my house will eat them anymore.  So this is the perfect recipe – it uses up all my over-ripe bananas and makes them into a delicious baked good that is healthy and my kids love.  This recipe uses a combination of coconut oil, applesauce, and banana to make it super-moist.  I usually double the recipe and make one loaf with walnuts for me and one with chocolate chips for my kiddos and husband.  Ripe bananas are so naturally sweet that I only add 1/4 cup of maple syrup and…
